Perfect Parfaits


Fruit and yogurt parfaits are THE best way to start a morning. I like to make these in single serving tupper wear cups on Sunday and have them ready to grab and eat on the way to the office in the mornings. The recipe is simple, and you can change it up with whatever fresh fruits or flavors that are in season. I sometimes like to make savory parfaits by replacing the fruit with chopped red and orange bell peppers and fresh herbs.


Ingredients
1 1/2 Cup Plain Yogurt (or get crazy and go for a flavor)
1/2 Cup Strawberries with stems cut off
1/3 Cup Black Berries
1/3 Blue Berries
1 Tbsp Cinnamon
Juice of Half a Lemon


Instructions
Thoroughly wash and dry berries and place in the freezer for at least 1 hour.

Combine lemon juice, cinnamon (leaving a pinch for garnish), and yogurt in a small bowl.

Layer the yogurt and berries in a parfait cup, top with berries and cinnamon. Cover and refrigerate.

Savory Dill and Sweet Pepper Parfait

Ingredients
1 1/2 Cup Plain Yogurt
3 Tbsp Minced Dill
1/4 Cup Minced Mandarin Oranges
1/3 Cup Chopped Red Sweet Pepper
1/3 Cup Chopped Orange Sweet Peppers
1/3 Cup chopped Bok Choy
3 Tbsp Black Pepper
Salt to taste

Instructions
Combine yogurt, minced dill, mandarin oranges in a small bowl. Salt and pepper to taste. Mix red and orange sweet peppers with the Bok Choy and layer with the yogurt.



Strawberry Preserves Parfait

Ingredients
1 1/2 Cup Plain Yogurt
1/4 Cup Mashed Strawberries
1 Tsp Vanilla Extract
1/2 Cup Strawberry Preserves
1/4 Cup Granola

Instructions
Combine yogurt, mashed strawberries, and vanilla extract. Layer with strawberry preserves and top with Granola.
