Post Pizza Night Cinnamon Rolls


Whenever we have a late night or unexpected travel, dinner is always a challenge. S came back from a quick work trip last night and since you never know what to expect at the airport, Pizza was the obvious choice. Its always my go-to "arrival" dinner because I can make the sauce and dough ahead of time and as soon as I know his plane has landed, its easy to top up the pizza and toss it in the oven. By the time he was putting his keys in the door the pizza was done and he thought I have suddenly developed satisfactory time management skills. In reality the airport just happens to be the perfect distance from our house.

The recipe for pizza crust I use is fabulous and so incredibly easy to make. No weird ingredients or special tricks, just simple stuff we always have around the house. But lets be honest, this really isn't about pizza dough, now is it?

The most exciting part of pizza night is actually the next morning. The only logical thing to do with leftover pizza dough is to make cinnamon rolls.





Ingredients
  • Left Over Pizza Dough
  • 1/4 Cup Brown Sugar (50g)
  • 1 Tbsp Cinnamon (7.5g)
  • 1 Tbsp + 1 Tbsp Butter
  • Milk
  • Confectioner's Sugar

Instructions
  1. Pre-heat your oven to 375 degrees Fahrenheit.
  2. Roll out your dough to about 1/4 of an inch thick. If it keeps springing back into the ball shape it was stored in, just cover it and let it rest for 10-15 mins. It should roll out easily when you come back.
  3. Brush the dough with 1 Tbsp of melted butter.
  4. Combine the brown sugar and cinnamon in a small bowl and coat the dough with the mixture. Make sure you cover all the way to the edges.
  5. Roll the dough into a log, starting from one edge and pinching the sides as you go.
  6. Cut the dough into 1 inch slices and arrange on a baking sheet, leaving about 2 inches between pieces.
  7. Bake for about 15 minuets or until golden.
Glaze
Combine milk and confectioner's sugar until desired consistency. I usually like a thinner glaze, but many people prefer something more frosting like.

  2. Hi Robyn! Today is a perfect day for cinnamon rolls. And if not today...then definitely tomorrow! The ones made from pizza dough are a little crunchier than the traditional ones, so I would keep checking them while their in the oven. Thanks for the well wishes! Hope you find something incredible to do with those tomatoes I saw over there. ;)
